A global trend is occurring where restauranteurs and diners alike are demanding fresh, locally sourced produce.  People are realizing that transportation of food not only adds unnecessary costs but it also diminishes the quality and longevity of consumable items.  It simply makes sense to eat food that is as close as possible to its source.

For Steve VanDermyden, owner and baker at Oven & Butter Artisan Bakery & Café in Captain Cook, sourcing fresh, local and - if possible – organic foods is a passion.  On the Big Island of Hawaii, there is an increasing amount of agricultural land that is being utilized for growing organic produce.  Given that much of Hawaii’s food is transported from mainland USA, localized farming is a positive move in the right direction  towards global food supply sustainability.  

Steve began baking bread at home as a hobby and taught himself the art of baking the perfect loaf.  Steve was raised in California where his grandmother would visit and make batch after batch of freshly baked cinnamon rolls.  He utilized his inherited talent with his first venture - an Italian restaurant. He then worked in various other restaurants, primarily as a baker.  After taking a break from the food industry to operate a construction business for 9 years, he reignited his passion for food and decided he wanted to bake artisan breads in Hawaii.  He says ‘I still see the magic in seeing flour and water turn into a hot, fresh loaf of bread.  I can’t think of anything better than that.’

Steve started to serve the South Kona community in 2012, baking and selling his artisan breads at local farmers markets.  In February 2014 the doors were opened at his current location, Oven and Butter.  In each of the handcrafted loaves he bakes, he uses the highest quality ingredients from unbleached organic grains to whole-milled flours.  Everything is made from scratch.   He makes breads such as challah, focaccia and sourdough sandwich rye without artificial ingredients or preservatives.

At Oven & Butter they also offer a range of breakfast and lunch items.  They have 3 flavors of Big Island Booch Kombucha on tap, and a house-made limeade that is to die for.  Estate produced 100% Kona coffee is served also, a perfect accompaniment to the fresh foods on offer.

Breakfast offerings include items such as Eggs Benedict (free range), Corned Beef Hash, Frittata, House-made Granola, Fresh Papaya Bowl.  Lunch dishes include Fresh Catch Fish Tacos, Portabello Mushroom, Ahi Melt, Kale Salad, Caesar Salad as well as a selection of sides and soups.

Oven & Butter is open Monday to Saturday 7am - 5pm, and located between mile marker 109 and 110 on Mamalahoa Hwy, Captain Cook.
